Organized Freezer Cooking | 6 Bulk Meals in Under 2 Hours!

Hey, guys! Meal prep with me! In this video I show you how I bulk cook / freezer cook for our family–FAST. This is perfect for large families and busy moms and dads. In under 2 hours I can make 16 freezer meals that will feed a family of four for just over $5 a meal. This makes meal planning and week night prep and the “what’s for dinner” question so easy to answer. I’m a busy, working mom, and I get that it’s HARD! Here are some of our go-to favorite recipes that are so easy to prepare.

Turkey Chili (kids love this one!):
2 lbs. turkey
2 15 oz. cans diced tomatoes
2 15 oz. can Mexican style tomatoes
2 15 oz. cans kidney beans
1 packet no-sodium taco seasoning (you can also make your own)
1 packet REGULAR Hidden Valley Ranch Mix
Frozen corn to taste
*Brown meat and onion. Add all ingredients and simmer 1 hour.

Beef Barley Soup (this is my mother in law’s recipe):
3 lbs. ground beef
2 onions, chopped
6 stalks celery, chopped
2 cups carrots, chopped
2 24oz. cans basil, oregano diced tomatoes
15 oz. tomato sauce
16 cups water
4 bullion cubes
1 cup ketchup
2 cups barley
*Brown meat and onion. Cook on low until veggies and barley are done (about 30 minutes)

CLEANING MY HOUSE! Fast & Organized Weekly Cleaning Routine

Clean with me! Some much needed cleaning motivation (on a budget of course). After lots of requests, I FINALLY made a video of my weekly whole house cleaning routine. I have daily cleaning routines that keep me organized and on top of the house (these take about 20-30 minutes a day), and my weekly cleaning routines (which incorporate monthly ones one or twice throughout the week) take 20-30 minutes a day. I want to spend LESS THAN AN HOUR A DAY staying on top of my house. And even then, we have young kids, so spotless floors aren’t my number one priority. Of course, you’re gonna need some basic housework equipment for your cleaning responsibilities, so you might be required to have a look on somewhere like Bissell if you’re short of things like vacuum cleaners.

I aim to get 80% of what I’m showing here done 80% of the time. I hope you find it motivating, helpful and learned some hacks and tips you can use in your home! If you want me to make a video of my daily and monthly/bi-monthly/yearly cleaning routines, let me know in the comments. Blessings and love! Remember, give yourself grace and love the season of life you are in (especially with little ones). Your kids are making memories.

Once a month, I’ll utilise a housekeeping service to come in and absolutely deep clean the whole house. I’ll take the kids out and let them clean everything. That way, I can stay on top of the maintenance, and let another company handle the deep cleaning (the hard work part). My friend had her restaurant commercially cleaned by GREEN FACILITIES and it looked amazing. There’s nothing better than a clean environment.

DIY Watermelon Popsicles

Welcome to the latest episode of Cooking with Carson #cookingwithcarson (a 4th of July special)! Looking for an easy summer activity you can do with your kids on a budget…using Dollar Store items? This recipe is one of our favorites! Easy Watermelon Popsicles!

Watermelon is yummy all on its own, but these popsicles are DELICIOUS and really cool you down on a hot summer day. They have a completely unique flavor that the orange juice brings out and the soft texture of a store-bought popsicle (so you don’t feel like you are biting ice as some home-made versions can be.)

Ingredients & Supplies (this makes about 10 large popsicles)
4 cups watermelon (about 1/4 of a medium watermelon)
1/4 cup sugar (less if desired)
2 tablespoons orange juice
*Dollar Tree Popsicle Molds or these molds (great for smaller serving size for kids and really easy to remove!)

Three Ingredient Unicorn and Galaxy Cookies (Cooking With Carson)

In this episode of Cooking With Carson we show you how to make Meringue Cookies that look like beautiful galaxies and unicorn poop! ? Kids get SO excited about this sweet recipe and it couldn’t be easier! It’s just three ingredients! Galaxy DIYs and cute Pinterest unicorns have been catching our eyes lately, and Carson has been begging to make this one.

My friend Windi made Carson’s Apron for his birthday. So cute, right? You can see her store here!

INGREDIENTS AND SUPPLIES:

  • 4 Egg whites (use large eggs)
  • 1 Cup Sugar
  • 1/4 tsp Cream of Tartar (optional, but helps the eggs/sugar mixture reach max fullness)
  • Vanilla Extract (optional for flavoring)
  •  Gel Food Coloring (Use gel for the brightest color, this is the kit I used to achieve galaxy colors)
    • If you haven’t tried gel coloring yet, and only want to spend a couple bucks, this is a GREAT starter kit
  • Piping Kit (they also sell them at Dollar Tree!)

How to make PERFECT Meringue Cookies (tips and tricks we learned):

  • Use a perfectly clean bowl (I wiped mine down with vinegar before mixing). If any oil or grease is in the bowl the eggs and sugar won’t set.
  • Use room temperature eggs. This is very important. Let sit out for at least an hour before using.
  • Start mixing slowly and then slowly speed up mixing
  • Add sugar when eggs make stiff peaks.
  • It takes longer than you think. About 5 solid minutes of mixing.
  • Add sugar SLOWLY 1 Tablespoon at a time.
  • Do not over mix. If mixture starts to separate or become chunky, you’ve mixed too much.

#1 Slow Cooker Recipe according to Reddit! (Honey Garlic Chicken)

In this episode of #cookingwithcarson, we make delicious Slow Cooker Honey Garlic Chicken!  My husband Charlie loves spending time on Reddit (something I will never understand lol), but when a thred popped up recently on the main page about slow cooker recipes, he immediately printed it and told me we HAD to try it!  So in this video, Carson and I give it a go.  What I really loved is how it uses bone-in chicken breasts– the flavor is so much richer and they are so CHEAPER for families than the boneless, skinless variety.  So, if you need a quick and easy Crock Pot recipe to impress, this is a great go-to.  You can’t go wrong.  Plus it doesn’t use a block of cream cheese, so you can feel good serving to your family.

You HAVE to try these make-ahead breakfast ideas!

In this episode of #cookingwithcarson we share two quick and easy freezer meals: bulk breakfast ideas that will help keep your morning running organized!  Make these no-bake cereal bars and egg frittatas ahead of time so you always have a go-to even for mornings when you are running late.  We’ve been enjoying these so much at our house we just had to share!  It saves us so much time on busy mornings.  Because I am late.  All the time.
P.S.  How funny is Owen’s face in the thumbnail?  Hehe!  ?

?EGG CUPS
12 large eggs
2/3 cup whole milk
Half cup of baby spinach, chopped (fresh or thawed frozen)
1/2 cup frozen corn
2/3 cup shredded cheese
salt and pepper to taste

Whisk eggs, then add ingredients to combine.  Fill 2 muffin tins (or make two batches) with cupcake liners and fill 3/4 full.  Bake at 350 for 18 minutes.  Remove, let cool.  Store in the fridge in a food storage container for the week, or freeze in Ziplock bags.  Use the reheat setting on your microwave to warm.

?NO-BAKE CEREAL BARS
1/2 cup honey
1/4 cup peanut butter
3 cups Cheerios cereal
1/2 cup yogurt chips
1/2 cup dried cranberries
1/2 cup slivered almonds
(or anything you have in your pantry: crushed walnuts, chocolate, etc.)

Add honey and peanut butter to a microwave safe bowl.  Microwave for 30-40 seconds until melted, stirring frequently.  Combine remaining ingredients into a bowl.  Add to a parchment paper lined baking dish.  Spread evenly and freeze for 20 minutes.  Remove and cut into bars.  To store, keep refrigerated, or freeze wrapped in wax paper.
