In this segment of cooking with Carson (apparently this is a thing now!), we’ll share a great recipe for Chickpea Popcorn! (Thanks, Dr. Oz for the inspiration!)
Easy Chickpea Popcorn
- 1 can garbanzo beans
- 1 tsp oregano
- 1 tsp onion powder
- salt to taste
- 1 tsp olive oil
Drains and rinse garbanzo beans. Place on a rimmed sheet with parchment paper. Sprinkle dry ingredients over chickpeas, drizzle olive oil, mix to coat. Bake at 350 degrees for 45 minutes (or until crunchy). Serve immediately and enjoy!
If you like a little more “kick to your popcorn…you can try the recipe below, too!

Hi Kathryn!
So confession I enjoy watching you but it is always a treat to see Carson! No kids of my own yet and he is just adorable. You’ve done such a good job raising him (and your hubby has done well too) and just wanted to say he is very well mannered!
Thanks so much, Bridget! Haha, it’s so fun to film with him 🙂
I’ve just become aware of you and your blog. I love the segment you did on your Mom’s new condo (before and after). Do you have pics of the outside to share with us?
Hi, Rosemary 🙂 I don’t share pictures of the outside for security reasons. Thanks for watching!
All of your stuff on you tube,is extremely helpful. Thank you very much.
Thank you so much, Lynn! Glad you enjoyed!
I’m addicted! I also am going to shout your praise over on my blog this Thursday and link back over to you (I hope that’s okay). I made this today and my girls LOVED it! I’ve tried it before but it was never as tasty. I seriously am loving your channel – I really think you’re my version of the PERFECT lifestyle blog! I’m no stalker, just really appreciative of the tips and DIYs you share.
