We couldn’t find the large shells at our grocery, so I adapted your recipe using rotini pasta and mixing the meat filling, pasta, and sauce together. I layered it over the salsa in the bottom of the pan and covered it with cheese like you suggested. Topped with green onion, tomatoes, and a dollop of sour cream made a meal my family loved!!! As a teacher on a snow day, I loved having the time to provide a warm, nourishing meal for my family. They were excited to know that there are two more casseroles in the freezer!! Good thing, too… they ate this one up!! Thank you!!!! 🙂
