Hey, guys! Meal prep with me! In this video I show you how I bulk cook / freezer cook for our family–FAST. This is perfect for large families and busy moms and dads. In under 2 hours I can make 16 freezer meals that will feed a family of four for just over $5 a meal. This makes meal planning and week night prep and the “what’s for dinner” question so easy to answer. I’m a busy, working mom, and I get that it’s HARD! Here are some of our go-to favorite recipes that are so easy to prepare.
Turkey Chili (kids love this one!):
2 lbs. turkey
2 15 oz. cans diced tomatoes
2 15 oz. can Mexican style tomatoes
2 15 oz. cans kidney beans
1 packet no-sodium taco seasoning (you can also make your own)
1 packet REGULAR Hidden Valley Ranch Mix
Frozen corn to taste
*Brown meat and onion. Add all ingredients and simmer 1 hour.

Thanks for sharing Kathryn…I do have a question – in the chicken enchilada recipe, where it calls for “vinegar” do you use white vinegar or cider vinegar, and can it be left out altogether?

Tip for poaching chicken breasts–
Add some aromatics to water(anything you might throw away such as onion skin garlic skin carrot skins, scallion tops, parsley stalks or just add some onion carrot nub etc) I also add a bay leaf… so good!
Bring water with aromatics and chicken to a simmer for a few minutes. Turn heat off and cover. The chicken will continue to cook without boiling (that makes the chicken tough) Also, with the heat off you can just leave it without watching constantly. In about 30 to 45 min check the chicken that it is cooked through. (You can leave it longer but don’t forget for more than an hour and half) Remove from liquid and proceed per your recipe. You could even add a chicken bouillon in the water, strain and you have some broth to use in recipes.
